In adobe illustrator how can you make a photo have a colour object with a black and white background ?

IIn adobe illustrator how can you make a photo have a colour object with a black and white background ?
i don't have illustrator but if you have photoshop you can do the same thing -either

1) desaturate the photo (put it into black and white), then use the history brush to 'paint' the object - wherever you use the brush, it will put it back into colour

or

2) use the 'magnetic lasso' tool to select the outline of the object, then create this into a separate 'layer'. select the background and desaturate it, the object in its separate layer will remain in colour

sorry if that hasn't helped much, let me know if you need any more help on the details of using photoshop

there is one option with effects to convert selection vector or rastered image to grayscale,

though to have one object colored may require a duplicate image with masked areas, or clipping of object in new layer,

hmmmm. Illustrator isn't made to work with and edit photos (rasterized images). Sorry to say but the best program for this is photoshop. I hope you have it! ...if not don't forget about the free thirty day trial on their website.
